Super easy snack recipe! Low carb, low fat, low calorie, high in vitamins…need I go on? These little “cucumber boats” are something my mom used to make when I was little, apparently. I don’t really have any recollection of this, especially since I don’t remember liking cucumbers until I was around 15…but hey, who am I to argue when the woman was on to something?
It’s really quite simple: First make some tuna salad. I mix a 3 serving packet with a heaping tablespoon of reduced fat mayo, a heaping tablespoon of fat free sour cream, a couple squirts of spicy mustard, some garlic and onion powders, a few shakes of dill weed, and black pepper. Next, slice up maybe a tablespoon’s worth of 2% sharp cheddar (or whatever cheese is on hand, personally, I think the stronger flavor goes well). Then, you take about 1/3 of a cucumber (English cucumbers for the win!), cut it in half both ways, and scoop out the soft part of the inside until you’re left with little “boats.” Then put a spoonful of tuna salad in each and top with cheese!
You get veggies, fish, protein, calcium, vitamins, minerals. THEY’RE YUMMY AND ARE LESS THAN 100 CALORIES. Go for it.
