Chorizo is a smoky pork sausage that gets its distinctive flavors from paprika&amp;#8230;and from its high fat content. While super tasty&amp;#8212;and everything in moderation, eh?&amp;#8212;this low fat, homemade mix is a great substitute!&lt;/p&gt;
&lt;blockquote&gt;
&lt;p&gt;&lt;span&gt;1&amp;#160;1/2 pounds ground turkey meat (at least 7% fat content)&lt;/span&gt;&lt;br/&gt;&lt;span&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;2-4 tablespoons ground paprika&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1-2 tablespoons ground pure red chile powder&lt;/span&gt;&lt;br/&gt;&lt;span&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1-2 tablespoons crushed chile pequin&lt;/span&gt;&lt;br/&gt;&lt;span&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1 tablespoon crushed garlic&lt;/span&gt;&lt;br/&gt;&lt;span&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1 tablespoon dried Mexican oregano&lt;/span&gt;&lt;br/&gt;&lt;span&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1 tablespoon salt&lt;/span&gt;&lt;br/&gt;&lt;span&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;2 teaspoons black pepper&lt;/span&gt;&lt;/p&gt;
&lt;/blockquote&gt;
&lt;p&gt;&lt;span&gt;Combine all ingredients well and refrigerate for 4 hours or overnight.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt;&lt;span&gt;Cook the chorizo thoroughly in a nonstick sauté pan crumbling the meat as it cooks. &lt;p&gt;I’m not a fan of completely fat free baking (stop tricking yourself that it isn’t a little bit too dry:&lt;em&gt; it is&lt;/em&gt;), but I’m definitely not a fan of oil-laden treats that pack on the pounds. Solution? Using just enough olive oil and —surprise!—avocado to produce a nice moist muffin that’s loaded with flavor and just 185 calories!&lt;/p&gt;
&lt;blockquote&gt;
&lt;p&gt;1 1/3 cups rolled oats (use GF certified if a concern)&lt;/p&gt;
&lt;p&gt;1/2 cup oat bran (use GF certified if a concern)&lt;/p&gt;
&lt;p&gt;3/4 cup cocoa powder&lt;/p&gt;
&lt;p&gt;1 1/2 teaspoons baking powder&lt;/p&gt;
&lt;p&gt;1 1/2 teaspoons baking soda&lt;/p&gt;
&lt;p&gt;1/4 teaspoon salt&lt;/p&gt;
&lt;p&gt;Scant 1 cup sugar (I use turbinado)&lt;/p&gt;
&lt;p&gt;3 tablespoons shredded coconut&lt;/p&gt;
&lt;p&gt;1 1/2 teaspoons coconut extract&lt;/p&gt;
&lt;p&gt;1 1/2 tablespoons olive oil&lt;/p&gt;
&lt;p&gt;Scant 2/3 cup plain nonfat Greek yogurt&lt;/p&gt;
&lt;p&gt;1/3 cup chopped avocado&lt;/p&gt;
&lt;p&gt;1 egg + 1 egg white&lt;/p&gt;
&lt;p&gt;1 1/2 tablespoons distilled white vinegar&lt;/p&gt;
&lt;p&gt;1/4 cup miniature semi-sweet chocolate chips&lt;/p&gt;
&lt;p&gt;2 tablespoons finely chopped almonds&lt;/p&gt;
&lt;/blockquote&gt;
&lt;p&gt;Preheat oven to 350 degrees Fahrenheit/175 degrees Celsius.&lt;/p&gt;
&lt;p&gt;Combine all ingredients except chocolate chips and almonds in a food processor until the oats are ground and the batter is smooth.&lt;/p&gt;
&lt;p&gt;*Note: if you are a batter tester, like myself, this will taste insanely coconutty—maybe even too coconutty. The flavor subsides as it bakes, so don’t fret.*&lt;/p&gt;
&lt;p&gt;Distribute batter among a prepared 12-cup muffin tin. They will be very full. &lt;/p&gt;
&lt;p&gt;Sprinkle about a teaspoon of chocolate chips and a half teaspoon chopped almonds evenly on top of each muffin.&lt;/p&gt;
&lt;p&gt;Bake for 30-35 minutes. Test with a toothpick; it should come out almost clean. &lt;/p&gt;
&lt;p&gt;Let muffins cool for 5-10 minutes before removing from tin. You may have to slide the sides with a rounded butter knife if you find them sticking (this is common when baking with oats alone).&lt;/p&gt;
&lt;p&gt;Enjoy with a cup of coffee or tea, a side of fruit and yogurt, or on its own!&lt;/p&gt;

It’s been a good while since I’ve posted a selfie on my health blog. Working out kind of took a back seat halfway through last semester, and though I didn’t gain much weight (I eat well, and like to eat well, after all) I lost a lost of definition and toning that I had worked so hard for at the beginning of the school year. WELL, I’m taking a lifetime wellness class this semester and am loooving it! It focuses a lot on our personal goals for holistic health: hydration, eating habits, fitness goals, sleeping, emotional health—seriously, I thought it was going to be lame and it’s been incredible so far. Not only have I already gotten back in the swing of regular exercising, I’ve made a goal to become a runner (okay, a jogger haha) so that when my runner boyfriend comes back from his study abroad semester we can go on jogs together :)  All right, that’s it from me…I’m gonna drink some water and then make a smoothie! Remember, people: you can be healthy in college with a little effort! &lt;3&lt;/p&gt;
